I have two bunches of rosemary to consume, so looking at pesto:
Rosemary PestoNo firm plans yet for the chard, but certain it will be in the neighborhood of garlicky greens. Strawberries to the freezer for smoothies. Potatoes and squash roasted and tossed with rosemary pesto!
1 c fresh rosemary leaves
8 garlic cloves
½ c olive oil
1 T sea salt
1 t pepper
Process rosemary and garlic in food processor until smooth, stopping once to scrape down the sides. Add oil slowly in steady stream. Add salt and pepper.
I don't know what Teresa did with last week's box, but am sure we'll hear soon.
I walked with the beagles to pick up the box tonight, just about 2 miles round trip. Miller, pictured here, is a canine intervertebral disk disease survivor. She can walk now, but can't go too far. Tonight she shared her doggie jogger with the veggies and didn't seem to mind.
