Nike Women's Marathon Pre-race Meal

  • Acorn Squash
  • Red Chard
  • Orange Carrots
  • Tomatoes
  • French Fingerling Potatoes
  • Red Cabbage
  • Celery
  • Tokyo Market Turnips
Tomorrow I run the Nike Women's Marathon.  Given my half-hearted training this time, I actually plan to run/walk the entire race.   Regardless, its 26.2 miles and does take a decent meal the night before to set one up for successful completion of the distance.  The tradition is a "pasta feed" -- a meal for race participants consisting of pasta, meat sauce, and garlic bread.  A lot of carbohydrates and a little bit of fat and protein, along with plenty of water.  My dinner tonight was French fingerling potatoes, roasted with Piment d'Espelette and Nicolau Farms Chevre.  For breakfast tomorrow it's a double serving of McCann's Irish Oatmeal, steel cut, with marmalade.



My plan for most of the rest of the vegetables is to make a large batch of Minestrone soup, tossing in the leeks from last week, carrots, turnips, celery, onions, red chard, and perhaps some tomatoes.

There continues to be a mounting pile of both carrots and red cabbage.  Ideas welcomed ... especially for the cabbage.
