For dinner tonight I finally got to the Garbanzo and Cabbage Soup recipe from The Peaceful Palate. The recipe, included below, was extremely easy and quick -- not to mention very satisfying. The picture to the right does not do the soup justice; it was amazingly colorful.
I adapted the recipe only slightly, adding the spinach and turnip greens from this week's box and finishing the soup with a spoonful of pesto.
Garbanzo and Cabbage Soup
Serves 6
2t olive oil
1 onion, chopped
1 garlic clove, pressed
1 can diced tomatoes
2c cabbage, diced
1 sweet potato, diced
4c vegetable stock
1 15oz can garbanzo beans, rinsed
1t sweet paprika
Heat oil in a saucepan and saute onions till translucent. Add remaining ingredients and simmer till potato and cabbage are tender, around 15 minutes.
