Rose Levy Beranbaum has some fantastic books and for the Cherry Turnovers I turned to the Pie and Pastry Bible. I made a few adjustments since I was using sweet cherries and not sour cherries. I reduced the sugar and added a little extra lemon. The lemon really came through, but in a good way. The crust was beyond tender. I used her Flaky Cream Cheese Pie Crust (as recommended). I made an extra batch of dough to use throughout the summer with peaches or apricots or ... the possibilities are endless!
